French Onion Chicken and Cous Cous

1 kg chicken drumsticks
2 tablespoons oil
60k butter
1 onion
400 can tomatoes
41g packet french onion soup mix
1 tablespoon soy sauce
1 cup water
3 teaspoons cornfour
1 tablespoons water, extra

Heat oil and half the butter in pan, add drumsticks and brown; remove from pan.
Drain fat from pan, add remaining butter and sliced onion, cook until tender.
Add the undrained mashed tomatoes, soup mix, soy sauce and water, heat through.
Place chicken in ovenproof dish, pour sauce over, cover and bake in moderate oven (180 deg C) for 45 minutes.
Remove chicken, pour sauce into pan, stir in blended cornflour and extra water, stir until sauce boils and thickens, pour over chicken.

Aussie Meat Pies

  • 1 tablespoon olive oil
  • 1 large brown onion, finely chopped
  • 500g lean beef mince
  • 1 tablespoon cornflour
  • 3/4 cup beef stock
  • 3/4 cup tomato sauce
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon barbecue sauce
  • 1 teaspoon Vegemite
  • 2 sheets frozen, ready-rolled shortcrust pastry, thawed
  • 2 sheets frozen puff pastry, thawed
  • 1 egg, beaten

  1. Heat oil in a saucepan over medium-high heat. Add onion. Cook for 3 minutes or until soft. Add mince. Cook for 4 minutes, stirring with a wooden spoon, or until browned.

  2. Mix cornflour and 1 tablespoon of stock to form a paste. Add remaining stock. Add stock, sauces and Vegemite to mince. Bring to the boil. Reduce heat to medium-low. Simmer for 8 minutes or until thick. Cool.

  3. Preheat oven to 220°C. Place a baking tray into oven. Grease 4 x 8cm base measurement pie pans.

  4. Cut 4 x 15cm circles from shortcrust pastry. Use to line bases and sides of pans. Fill with mince. Brush rims with water. Cut 4 x 15cm circles from puff pastry. Place over meat. Press to seal. Trim. Brush with egg. Season.

  5. Place pies onto hot tray. Bake for 20 to 25 minutes or until golden. Serve.

Thick Custard

2 eggs
3 tblespoons cornflour
3 cups milk
3 tablespoons sugar
1 tspn vanilla

Mix and whisk the eggs, cornflour and milk in a saucepan, put onto heat and keep whisking until becomes thick and creamy, take off heat then add 3 tablespoons sugar and 1 tspn vanilla and whisk through.

Carrot Cake

1 1/2 cups finely grated carrot
1/2 cup chopped walnuts (optional)
2 eggs
1 cup caster sugar
3/4 cup oil
1/2 tsp vanilla essence
1 cup plain flour
1 tsp baking powder
1 tsp baking soda
1 tsp mixed spice
1 tsp cinnamon
1/2 tsp salt
Combine eggs, sugar, oil, vanilla and sifted dry ingredients in basin. Beat on low speed until smooth. Stir in carrots and walnuts. Mix well. Pour into greased 20cm ring tin. Bake 45-50 minutes in a moderate oven - about 180C.

Cream cheese topping
Beat 25g of soft butter and 50gm of cream cheese until smooth. Add 1 tsp grated lemon rind and 1 1/2 cups sifted icing sugar. Beat until smooth and use to ice cake.

Home made LCM Bars

60g butter
1 bag (150g) marshmallows
1/2 tsp vanilla essence
4-5 cups Rice Bubbles

In large saucepan melt butter and marshmallows over a gentle heat, stirring constantly. When marshmallows have completely dissolved add vanilla and stir in the rice bubbles. Work quickly as the mixture becomes sticky.

When combined, turn the mixture into a greased slice tin which is lined with glad wrap, I spray it with non stick spray as well and press down very firmly using wet hands. Press edges in neatly with a knife and leave to cool. Finish with a scattering of coloured sprinkles, and then roller over them so they are pressed in. When cool, cut into 30 squares or 16 bars.

Tuna & Spinach Pie

425gm tin tuna
2 onions
60gm butter
1 tablespoons flour
1 cup milk
1 dessertspoon parsley
small bunch spinach
cup grated cheese
1 dessertspoon lemon juice
salt and pepper
3 slices of puff pastry

Dice onions and fry slowly in butter and remove from pan and set aside.

Melt remaining butter and stir in flour and cook for 1 minute, add milk, gradually stirring until boiling, and season with salt and pepper. Add cheese, tuna, cooked onions, lemon juice and parsly. Remove from heat and cool

Boil spinach, drain set aside.

Line base and sides of dish with pastry, and layer the tuna and spinach mixes and then finish with layer of pastry.

Cook in moderate oven for 40 minutes or until cooked and brown.

Pikelets / Pancakes

1 cup SR flour
1/4 cup sugar
pinch bicarb
1 egg
3/4 cup milk.
